I'm so inspired by trees, especially seeing leaves against the sky. I'll have to do more posts on them. :)

Quinoa Stuffed Acorn Squash

I had these for dinner this week. Good and satisfying. You can get the recipe here. I added chopped apples. Save the seeds from the squash, they taste good roasted with a little salt and olive oil :)

Knitting Socks

I'm knitting these socks at the moment. I love knitting. At first I thought it was boring and took too long but now I think it's very meditative. I would like to have more free time to knit. I got the pattern from this book. The yarn is organic cotton from here. 

Apple Picking

I went apple picking not too long ago at Larriland Farm in Woodbine, Maryland. It was sunny and windy. A nice day by the lake. I made apple pie :-)
